Making madeleines

Lately I’ve been trying to cut back/cut out some of my gluten/sugar intake.

I’ve been trying out some recipes with almond and coconut flour and to be honest some of the recipes were complete failures..

Working with these flours can be tricky.

Today I was in the mood for some madeleines to have with my tea and coffee so I looked up some recipes and decide to try this one

Instead of maple syrup I used 1/4 cup Swerve sweetener and 1/4 cup Stevia in the Raw.

And I tried out a couple different variations.

I left one batch plain

Used unsweetened cocoa powder for one

Almond extract and lemon zest for the next

And butterscotch flavoring for the last.

Like I said these flours can be tricky so I wasn’t sure how they would turn out but I’m very happy with the end result  🙂

Now I have some little snacks for the next couple days! (If they make it that long 😛 )
